Prepare the fish, clean the carrots and cut the slices. Place the chopped carrots together with the fish in a yena bowl. Then mix with the rest of the ingredients: spices, oil, wine, onion and finely chopped garlic. Cover the dish with a lid and put it in the preheated oven for 40-60 minutes (depending on the oven of each - at 240 degrees at the beginning, then at 200 degrees towards the end (the last 20-25 minutes, I I did one like that, anyway it is checked from time to time.) When the carrots are almost soft, it means that everything is done.

At the end we add the small greens and enjoy the wonderful, healthy and delicious meal!

Ingredients Baked vegetable fish:

  • as many healthy pieces of fish (around 200-250 grams) as you have enough to saturate, I used carp fillets
  • 4 tablespoons oil (I used extra virgin olive oil, but it works for anyone)
  • 1 small onion
  • 2 cloves of garlic
  • 1 red pepper
  • 1-2 carrots
  • celery as small as 1 egg (or 1-2 celery stalks)
  • 400 ml. tomatoes in broth (tomatoes and juice)
  • 200 ml. of white wine
  • 3-4 tablespoons of flour
  • 10 peppercorns
  • 2 bay leaves
  • thyme, ground pepper
  • chopped greens for sprinkling (parsley and thyme, according to preference)

1. The fish pieces are salted and peppered (picture 1) then given through flour. Heat 3 tablespoons of oil in a pan and brown the fish on both sides (picture 2). Once browned, remove the fish from the pan and set aside.

2. In the same pan, without washing it, add the rest of the oil. Then add chopped onion, finely chopped celery, crushed garlic and sliced ​​pepper. Stir until they begin to soften, stirring constantly. Add the cleaned and sliced ​​carrots. Add 2-3 tablespoons of wine and simmer the vegetables for 5-6 minutes (picture 3).

In a large frying pan with oil, put the carrots on low heat for 3 minutes. Add the onion and leave for another 5 minutes until golden brown.

They can be consumed as such, with a garnish of Mediterranean vegetables or they can be used in cold sandwiches.

Spicy mackerel meatballs

  • a can of RIO Mare Grilled Mackerel in olive oil, drained
  • or preserve RIO Mare Grilled Mackerel in chili sauce, drained

  • a tablespoon of flavored cereal cereal with vegetables, hydrated in hot water with lime juice
  • 2 sprigs of green onion
  • 2 tablespoons green parsley

  • Mix half a grated carrot with a quarter of diced yellow bell peppers
  • hot pepper paste to taste.

The ingredients are mixed in the food processor until a homogeneous paste is obtained. They match the taste, they must be spicy and slightly salty to counterbalance the sweet taste of carrots and peppers.

With a teaspoon, form small, round meatballs and give them once more through breadcrumbs to keep their shape. Bake in the oven, in a tray covered with parchment paper, at 220 degrees, about 7 minutes.

Serve with a garnish made of bok choi, brussels sprouts, zucchini, carrots and red bell peppers in the oven or with Asian vegetables in the wok. They are also used cold, in salads containing carrots, sweet corn, peppers and lettuce, along with soy sauce and lemon juice.

I encourage you to try to be as creative as possible in the kitchen and to experiment with different tastes and textures, to test new products and to find that balance between comfort and healthy choices.

1 4 kg carp

Method of preparation:
Peel an onion and cut it into larger slices.

We wash 10 tomatoes and put the core on the grater, we throw the skin away.

Wash 4 tomatoes and cut them into slices.

Finely chop the green parsley.

Put oil in a pan and put the onion to harden.

When the onion becomes glassy, ​​add the grated tomatoes over the onion, mix and let them cook together for another 5 minutes.

We cleaned the fish of scales, fins and organs, washed it well, cut it into pieces, I cut it in half lengthwise on the back, then I cut it into pieces. Head and tail, I didn't use them, I put them in the freezer, I'll probably make a borscht on them.

Put the fish pieces on a flat tray, season them well with salt, pepper and vegeta, to taste. Squeeze the juice from a lemon over the carp and let it rest, with all these ingredients on it, for 10 minutes.

In a tray we put a little oil, we add onions and hardened tomatoes that we spread like a bed. We put a pinch of salt on top of them.

Put the carp pieces (skin up) on the vegetable bed and add over the tomato slices.

Sprinkle over the carp pieces and insert, in abundance, freshly chopped parsley.

Pour over the carp 250ml white wine and oil over each piece of fish.

Put the fish prepared in this way in the preheated oven and let it bake for about 30 minutes, there is no need to turn it on both sides. From time to time grease with the juice from the tray on top. 5 minutes before removing it, we can turn on the heat.

After 30 minutes, take the carp plate out of the oven, which is tender and delicious, and serve it with a rice garnish. It is a wonderful recipe that is excellent served hot, but it is very good and cold.

We can serve this carp plate next to a rice garnish.
In a saucepan put 1l of water, season with vegeta and salt to taste, and add the chosen and washed rice beforehand. We boil it for 20-30 minutes, after which it is ready to serve.
